Ingredients

  • 8 cups spinach
  • 2 cups diced butternut squash
  • 1.5 cups diced sweet potato
  • Hot peppers
  • 4 cloves garlic
  • Olive oil
  • Med. yellow onion
  • Black pepper
  • 13.5 fl oz coconut milk
  • 16 fl oz vegetable stock
  • 12 okra tips

Directions

  1. Dice onions, slice spinach, cube potato/squash, remove pepper seeds, slice garlic, slice okra.
  2. Add onions, oil, black pepper, garlic to pot and sauté 3 mins
  3. Add sweet potato, okra, squash
  4. Turn up heat (6)
  5. Add spinach and coconut milk
  6. Add stock and peppers
  7. Bring to a boil then simmer for 50 mins
  8. Whisk until broken down and mixed
